High-quality caviar should have a light color, uniform egg size, a fresh sea aroma and a delicate taste. Caviar is a delicatessen product, and its quality can be seriously affected due to a violation of the technological process and improper storage temperature.
The first stage is examining the packaging. Caviar should be packaged in a metal or glass jar with a lid. You should not buy it in plastic packaging—most likely, it is a fake.
The packaging must contain the following information:
- Label—the label must indicate the fish breed, place of production, variety, composition, and confirmation that the caviar was produced under aquaculture conditions (CITES certificate).
- Information about the manufacturer: name of the fishing farm, batch number.
- The expiration date: packaging dates and expiration dates.
Compare the price: If the price of caviar seems too low, it may be a sign of a fake. High-quality caviar, especially osetra and beluga, is usually expensive.
Buy caviar from reliable suppliers who have a good reputation and certification.
Pay attention to the appearance of the packaging: сounterfeits may have unfinished or poor-quality packaging with spelling errors or insufficient information.
